Here at Blue Island Oyster Bar & Seafood, we're constantly talking to our purveyors to bring you fresh, sustainable seafood. As seasons change, so do our offerings. But what about oysters? They're certainly not grown here in Colorado. Thanks to our special partnership with our oyster farm in New York, we can bring you almost daily shipments of east & west-coast oysters.

It all started in 1995, when Chris Quartuccio, now CEO and founder of Blue Island Oyster Co., began scuba diving for natural oysters in the Long Island Sound and would deliver them daily to chefs in New York City.

As years passed and the demand for fresh shellfish grew, Chris was able to establish an oyster farm in 2004. The farm is in the Great South Bay, strategically located near the Fire Island Inlet, close to the Atlantic Ocean making it an ideal home for raising oysters. The strong current and abundance of algae, phytoplankton, and minerals create the perfect environment for cultivation.

In 2012, Chuck Westfall became a partner at Blue Island Oyster Farm and has been an integral part of its expansion. Chuck is a lifelong sailor and has devoted countless hours to the study of oyster growing techniques from around the globe. As a result, what started as a boutique oyster farm has now become one of the largest oyster-producing farms in the state of New York with an oyster nursery and hatchery. Seawater and sunshine are all that's needed to produce millions and millions of baby oysters.

Blue Island Oyster Co. not only farms oysters, but has amassed itself to be the number one oyster and clam distributor in the New York area, dealing with companies located in New Zealand, Canada, and Mexico to name a few. Distribution includes the whole of the United States, from Los Angeles to Miami, Chicago, and of course, Denver, Colorado.
